GAPS "Pumpkin" muffins

I modified the coconut banana muffin recipe to use 1 cup acorn squash in place of the bananas, and added cinnamon, nutmeg, and cloves for seasoning. They came out delicious! Here is the recipe:
Beat 6 eggs and 1/4 cup each of honey and coconut oil or melted butter. Add 1 cup each of mashed squash and coconut flour. Add cinnamon, nutmeg, and cloves. Make as muffins for 20-25 minutes in a 350 degree oven. Enjoy!

  1. Have you considered giving up the eggs and anything else that could contain corn? My daughter, son and I get weird symptoms when we ingest corn including confusion, anxiety, foggy, inability to concentrate, feelings of doom, irritability, rage, rigidness, etc. Those are just our psychological symptoms and they were the last to go once we got completely corn and soy free.

    We are on GAPS, but it is still possible to accidentally ingest corn derivatives while on the diet. Just email if you are interested in more information.
